You have your basic scoring values for each sushi piece you create: flavor, texture, aroma, and color. This score is based upon your ingredients, divided into main ingredients and toppings, which can be combined in different ways depending on what sort of sushi you are making (Maki, Nigiri, Gunkan), where some may allow you to use multiple ingredients, others can instead allow for toppings. Each component of the sushi scores differently in these values and certain ingredients and toppings may go well together and increase the values more, whilst others might actively ruin the taste of one another, resulting in lower values. What works is largely a question of trial and error, but any time different ingredients and toppings are used, the game stores the information of what is compatible and what is not. Furthermore, each ingredient can be differently favored among different demographics, dependent on age. When you enter into a contest, you present a piece of sushi you created that takes into account the values most important to the judges in the particular contest, whilst also remembering that the ingredients used will be favored by the demographic of the judges.
